1.In a medium pan, heat oil on low heat, add the onion and cook until wilted. Add spinach, scallions, parsley and cook until wilted and water drained. Season and sit aside in a strainer and let it cool.
2.In a separate bowl add feta, eggs and lemon zest and mix until well. Add cooled drained spinach to the cheese mix and mix well till incorporated.
3.Start assembling by layering 5 layers of phyllo and brushing oil between each layer then slice them then start folding it to form a triangle shape.
4.Put on a baking tray then brush with oil and sprinkle with sesame and black seeds. Bake in a preheated oven at 180c for 15 minutes. Once its golden brown serve immediately.
