How to prepare

Method
  1. Preheat your oven to 220 c.
  2. Place the tomatoes in a medium bowl. Add the garlic, olive oil, vinegar, salt, pepper, and Italian herbs. Stir to coat. 
  3. Transfer the tomatoes to a small baking dish.
  4. Roast the tomatoes until they are soft and beginning to burst, about 20 minutes. Let them rest for 5-10 minutes
  5. Meanwhile make the cheese mix, using food processor mix feta cheese with heavy cream, olive oil, lemon zest, garlic and black pepper until creamy and well combined.
  6. On a plate add cheese mix, top with roasted tomatoes, garnish with parsley and serve with your favorite roasted bread.
